Brazilian Hippie Handrolls

Completely vegan, easy to make at home, many vitamins and nutrients so you will be healthy and satiated.

Ingredients:
1-2 ripe mangoes
3 avocados
1-2 pcs. jicama
½ bunch of cilantro
1 jalapeno
Nori
1 lemon
1 lime
2 cups of short grain rice, white or brown
1 tsp. Raw sugar

Rinse and strain rice. Steam rice with a pinch of salt and a spoonful of raw sugar. Let the rice steam and cool while you prep the vegetables. Clean the mango and jicama and cut them into giant matchsticks. Slice the avocados, mince and seed the jalapeno, and pick a couple sprigs of cilantro. Set all the vegetables out in a mini-assembly line. Begin with a sheet of nori and add a spoonful of the rice. Go down the assembly line and add a couple pieces of mango, jicama, avocado, cilantro and a sprinkle of jalapeno. Finish with a lemon and lime squeeze and a bit of salt and pepper. Starting with the bottom left corner of the nori, roll into a delicious Temaki, or hand roll sushi. Enjoy!
