Striped bass farms in the U.S. are well-managed. Bass farms are usually located inland, so ocean pollution from discharge of wastewater is not a factor. Raw sugar<br /><br />Rinse and strain rice. Steam rice with a pinch of salt and a spoonful of raw sugar. Let the rice steam and cool while you prep the vegetables. Clean the mango and jicama and cut them into giant matchsticks. Slice the avocados, mince and seed the jalapeno, and pick a couple sprigs of cilantro. Set all the vegetables out in a mini-assembly line. Begin with a sheet of nori and add a spoonful of the rice. Go down the assembly line and add a couple pieces of mango, jicama, avocado, cilantro and a sprinkle of jalapeno. Finish with a lemon and lime squeeze and a bit of salt and pepper. Starting with the bottom left corner of the nori, roll into a delicious Temaki, or hand roll sushi. During the contest, sushi chefs invent new rolls and they are offered for a limited time. The most popular rolls win the contest and are added to the permanent menu starting in March.
